Campsite Recipes: Foil-Wrapped, Lemon Herb Salmon

Just because a recipe is quick and easy-to-make doesn’t mean it can’t be delicious! Case in point is this foil-wrapped, lemon herb salmon recipe that helps you spend less time cooking and more time enjoying the outdoors.

What You’ll Need:

  • 4 salmon filets
  • 8 slices of lemon
  • 4 tbsp. butter
  • 4 tbsp. dijon mustard
  • 4 sprigs of tarragon
  • 4 sprigs of dill
  • 2 garlic gloves, minced
  • 1 shallot, sliced
  • Sea salt and black pepper
  • Olive oil
  • Tin foil

How to Make It:

  1. Season salmon filets with sea salt and fresh cracked black pepper to taste and spread one tbsp. of dijon mustard over the top each salmon filet.
  2. Layer two lemon slices, a sprig of tarragon and dill, a few slices of shallot, 1 tbsp. of butter and some garlic on each salmon filet. Liberally coat the tops of the filets with olive oil.
  3. Wrap salmon filets individually in tin foil.
  4. Place tin foil-wrapped salmon directly in fire.
  5. Cook for 6-8 minutes, or until fish is cooked.
