Campsite Recipes: Foil-Wrapped, Lemon Herb Salmon
Just because a recipe is quick and easy-to-make doesn’t mean it can’t be delicious! Case in point is this foil-wrapped, lemon herb salmon recipe that helps you spend less time cooking and more time enjoying the outdoors.
What You’ll Need:
- 4 salmon filets
- 8 slices of lemon
- 4 tbsp. butter
- 4 tbsp. dijon mustard
- 4 sprigs of tarragon
- 4 sprigs of dill
- 2 garlic gloves, minced
- 1 shallot, sliced
- Sea salt and black pepper
- Olive oil
- Tin foil
How to Make It:
- Season salmon filets with sea salt and fresh cracked black pepper to taste and spread one tbsp. of dijon mustard over the top each salmon filet.
- Layer two lemon slices, a sprig of tarragon and dill, a few slices of shallot, 1 tbsp. of butter and some garlic on each salmon filet. Liberally coat the tops of the filets with olive oil.
- Wrap salmon filets individually in tin foil.
- Place tin foil-wrapped salmon directly in fire.
- Cook for 6-8 minutes, or until fish is cooked.
